SIMPLE GLUTEN FREE DATE LOAF


This date loaf is now my favourite, when I have to make a cake.  Remember when school and church groups put out recipe books, manually typed and duplicated in the 1960's /70's? I am still inspired by some of those recipes, though I usually change one cup of sugar to one tablespoon of coconut or brown sugar.
Ingredients:
1 cup chopped dates
Handful uncrystallised or crystallised ginger chopped and good dash of powdered ginger spice (optional)
1 cup boiling water
1 heaped tablespoon brown sugar
1 tablespoon butter
1/2 teaspoon bicarb soda
Pour boiling water over above ingredients and allow to cool.
2 beaten eggs
2 cups gluten free self raising flour (I use Aldi or Orgran)
Stir in eggs and flour.  
Taste batter to ensure sweet enough to taste.
Bake about 20 minutes in moderate oven until dry when checked with skewer etc.
Nice as is or with butter.  Enjoy with friends.
